- [FOOD] Hawaij means “mixture” in Arabic and is a spice blend commonly found in Yemeni cooking. So while calling our blend Hawaij Masala is a bit like saying “chai tea,” given that masala also means mixture or spice blend, it is our nod to the intersection between Arabic and South Asian cultures. Much like Garam Masala in South Asia, every household has its own version of the blend; however, hawaij typically features cumin, coriander, turmeric, black pepper, cinnamon, and cardamom. Hawaij finds its origins in Aden, where South Asian communities combined local Yemeni tastes with Indian ingredients. Nadir, for one, remembers distinctly the earthy scent of hawaij being ground at home as a child. That scent meant zurbian was in the making—a fragrant Yemeni lamb biryani inspired by the cooking of Hyderabadi merchants who had settled in Aden. In many homes, hawaij typically imparts its beautiful peppery flavor in meat stews and soups, or in ful, a rich fava bean stew that’s a staple breakfast item across Southwest Asia and North Africa.
